The book “Canal House Cooks Everyday” gives an easy recipe for cooking roast prime rib and beef. The authors, Christopher Hirsheimer and Melissa Hamilton say “gentle heat cooks the meat throughout evenly”. The temperatures listed will give you rosy pink slices of beef.
Pre heat the oven to 200 degrees; season roast with salt and pepper; heat a heavy skillet that’s big enough to hold the roast and brown the meaty sides; transfer roast to a large roasting pan and roast for approximately 3 to 4 1/2 hours or until the internal temperature is 120 degrees = rare/135 degrees = medium rare/140 degrees = medium. Let meat sit for 30 minutes before serving.
